Last night I used the Moosewood's 6 Minute Cake which is my pantry standby (also handily vegan). It looks very similar to this one - except it's 1.5 cups flour, 1 cdup sugar, 1/2 cup oil and cold coffee instead of milk. <BR/><BR/>But I have to say it's lacking in a certain richness and I normally end up compensating for that by melting heaps of chocolate over it which means a trip to the shop and kind of defeats the purpose.
